There was a lot of anticipation for making this recipe, especially due its clean flavors and vegetable goodness, but I must admit, I was a bit underwhelmed. Aside from the fact that I ate it for dinner, lunch and dinner again, I just didn't get enough “bang” for my buck (aka it took me way too long to make this recipe - user error?), or I'm just partial to the sautéed veggie and vinegar quinoa that Jeff and I typically make. Quinoa, however, is a super grain and awesome for a healthy diet. If you're not sure what to do with it, I'd say this recipe could be a good start (or maybe use this quicker Asian Fried Rice recipe but sub the rice for quinoa). Need to know how to cook quinoa?
