PYRC #50: Lazy Day Shrimp Scampi

I bought shrimp and parmesan cheese to make a pesto shrimp recipe, but it turns out that the recipe was for cilantro pesto, not basil pesto, so I diverted to plan two - making any Pinterest recipe that I had the ingredients for. I wasn't really in the mood to cook, actually, so this oven garlic butter shrimp was perfect (aka Lazy Day Shrimp Scampi).

I don't have a link to credit. My directions were simply the following caption:

Melt a stick of butter in the pan. Slice one lemon and layer it on top of the butter. Put down fresh shrimp, then sprinkle one pack of dried italian seasoning. Put in the oven and bake at 350 for 15 min.

Who would have ever thought this would turn out tasting like shrimp scampi? Seriously, is that the trick to shrimp scampi - butter, garlic and lemon? All I needed was some angel hair pasta, and I would have at least been on Joe's Crabshack's level (sad, I know).

If you'd like some better directions, here's how to make this Lazy Day Shrimp Scampi...

Ingredients
  • 1 stick of butter
  • 2 large lemons, sliced
  • 1.5 pounds of peeled shrimp, thawed 
  • 1 pack of dried Italian seasoning, such as a Good Seasons Italian Dressing pack
Directions
  1. Preheat oven to 350 degrees
  2. Melt a stick of butter in a sheet pan
  3. Slice the lemons and layer them on top of the butter
  4. Place shrimp on top
  5. Sprinkle all with Italian seasoning
  6. Bake for 15 minutes

I really enjoyed it. Jeff did too. I won't be making it that often because I don't buy a lot of shrimp, and I try to stay away from uber better recipes, but if I were craving shrimp scampi and wanted an easy recipe, I'd absolutely make this again.
